WATERMELON SALSA
Makes about 3 1/2 cups
Ingredients:
-
1 lime
-1 teaspoon grated lime zest
-2 cups 1/2-inch pieces seeded watermelon
-1 cup 1/2-inch pieces seeded peeled cucumber
-1/4 cup thinly sliced green onions
-2 tablespoons minced fresh cilantro
-2 teaspoons minced seeded jalapeño chili pepper
-1 teaspoon sugar

Preparation:
1. Using small sharp knife, cut peel and white pith from the lime. Cut the lime into 1/4-inch pieces and place in a medium bowl.
2. Add all remaining ingredients to the same bowl.
3. Season with salt and pepper. Toss to blend.
4. Cover and refrigerate at least 30 minutes to allow the flavors to meld. Serve chilled.

Can be prepared 2 hours ahead. Keep refrigerated. Best if eaten the same day you make it.

*Note: if you don’t like cilantro, mint is a good substitute.
